Quick Bytes: Tuscany Brings Together Cuisines from Rome and Paris

Soumabha     4:04 AM     Food Festivals, Hyderabad, Product Reviews, Quick Bytes, Sabyasachi     No comments

The culinary team at The Trident Hyderabad comes up with niche food festivals at regular intervals. Their latest promotion at Tuscany, their Italian restaurant, is called “Rome meets Paris” presenting an array of delicacies from the famed French and Italian cuisines.

Whereas Hyderabad has quite a few restaurants offering Italian food, both in the fine dine and casual dine category, there are not many offering French food. Bouchon at Jubilee Hills, which is the only one I can remember, unfortunately shut down within a year. So, when I was invited for this promotion I was keener about the French offerings from Chef Manik’s team.

Paris Meets Rome Tuscany

The festival has a specially curated a-la-carte menu. Whereas the Italian offerings have a lot of variations across regions and rely on the freshness of ingredients, the French cuisine boasts of subtlety in taste and  flavour.  In this promotion, there is no attempt to offer a fusion of the two cuisines; instead, each is presented in its own glory.

Panzanella
Panzanella

Our sampling journey started with two salads – one from each cuisine. Panzanella was a Tuscan-style salad with diced tomatoes, cucumber, bell pepper and bread in a simple tangy dressing.

Salad Nicoise was the French entrant in this category. A salad using Nicoise olives, boiled eggs and tuna in a simple preparation, was a personal favourite. The highlight was the tuna, which was perfectly done.

Salad Nicoise
Salad Nicoise
The Italian Ribollata was a rustic Tuscan broth made with bread and vegetables. Executive Sous Chef Prafull Aina, who is the person behind this festival, told us that this recipe is popular in Italy to use up leftover bread. This was a thicker version of the Minestrone, almost like a broth. Chilled Vichyssoise, the creamy French soup was one of the best dishes of the promotion. A cold soup of potato and leek, this was a perfect summer recipe.

Lamb Navarin
Lamb Navarin

Among the main courses, Lamb Navarin stood out. A delicious French lamb and vegetable preparation, it was served with herbed rice. I overheard someone commenting in jest that it looked similar to Hyderabadi Nihari. The similarity does not end there, for this is a slow-cooked dish too.

Coq-Au-Vin
Coq-Au-Vin

Coq-Au-Vin was the other French main course, a red wine braised chicken delicacy served with mushrooms and onions. The chicken had soaked in the wine, making it soft and succulent.

Ratatouille
Ratatouille

Ratatouille was possibly the only dish on the menu which is popular in not just France and Italy, but all over Europe.  This was essentially sautéed vegetables like eggplant, bell pepper and onions served with garlic bread.

Paris Brest
Paris Brest

The desserts stole the show. I had been hearing about the exotic Paris Brest, a choux pastry stuffed with cream and fruits, from my friends who visited the festival earlier. The dessert had a topping of fresh fruits and the combination of the pastry with the fruits and cream inside was indeed heavenly.
Cassata with Raspberry Coulis was the other dessert, a classic Sicilian preparation. This is something not to be missed either. Inside the almond marzipan cover, it had strawberry ice cream along with fruit and nuts.

Cassatta with Raspberry Coulis

A very interesting promotion indeed. Trying out the French delicacies reinforced my wish that we must see a pure-play French restaurant in Hyderabad soon. But in its absence, thanks to the Tuscany team for giving us a taste of the cuisine. The festival is a-la-carte and on at Tuscany until 3rd July only for dinner.

Fomokart brings native specialities from all over India to Bangalore

Soumabha     2:37 AM     Bangalore, Product Reviews, Soumabha     No comments

The culinary diversity of India can be attributed to the varying tastes in different regions. From north to south, east to west, India has a wealth of flavours which translate into the native specialities of every region be it pethas of Agra, sweets from West Bengal, namkeen from Indore or other native sweets and snacks.

Angoori Panchhi Petha

As kids, we often don't give much importance to the goodies and munchies available around us and take them for granted. Only when we sprout wings and go out into the adult world is when we realise what we have given up and the nostalgic memories creep in. As a Hyderabadi potta, I have grown up eating delicacies in the Pearl city like Haleem, for every Ramzan, but it was only when I went to college outside Hyderabad that I realised the joy of having Pista House Haleem delivered at your doorstep.

Shan-e-Delhi Mutton Quorma Masala
Shan-e-Delhi Mutton Quorma Masala

Fomokart addresses this very problem and provides a solution to all those who can’t be wherever they want to be, whenever they want to be to satiate their cravings of truly authentic taste from different parts of India. Their range currently includes sweets, snacks, pickles and mixes which they deliver only in Bangalore but I hope they will soon expand to the rest of India.

Maganlal Peanut Chikki

Maganlal Peanut Chikki
Maganlal Peanut Chikki

Overjoyed to find a website like this, I ordered a ton of items from Fomokart which was delivered within 5 working days. Of the lot, I was really excited to find Maganlal Chikki amongst the offerings. With shops across Maharashtra, Maganlal is touted by many to serve the best chikki be it assorted, groundnut or sesame chikki. They have many more varieties like the dry fruit special, cashew krush chikki and soft rolls which will definitely be part of my next order.

Chitale Bandhu Bhakarwadi
Chitale Bandhu Bhakarwadi

I was a bit skeptical about my order of Bhakarwadis from the Chitale Bandhu Mithaiwaale as I am not a big fan of bhakarwadis. However, one of the funniest things happened the next day in office when one of my colleagues who was returning from his hometown, Pimpri-Chinchwad in Maharashtra, got back an exact same box which had been delivered to me the day before. The bhakarwadis were packed in an airtight sealed box which kept it fresh and crispy.

Chitale Bandhu Bhakarwadi

Of the other items ordered, there were pethas from Panchhi Petha Agra, biscuits from Karachi Bakery and special masalas from Delhi. Getting different varieties of munchies and sweets delivered to our doorstep, that too from the most authentic sources has definitely won my heart. Definitely recommend all the food lovers of Bangalore to check out the range of savouries available at www.fomokart.com

Janus, the Premium Grape Brandy from Sula and Remy, Comes to Hyderabad

Soumabha     6:42 PM     Events, Hyderabad, Product Reviews, Sabyasachi     No comments

I am a huge fan of the range of wines from Sula Vineyards, with a particular fondness for a product called Sula Riesling, a white wine with fruity flavour. The 15-year-old company is clearly the leader of the wine market in India with their red, white and sparkling wines. I have heard a lot about their vineyards in Nashik and was contemplating a visit to it for a long time, which has not somehow not fructified yet.

Recently, the company had announced a new addition to their product line. As a result of a partnership with Remy Cointreau, Sula announced the launch of their first brandy named Janus, which distinguishes itself from the other brandy names in the market due to the fact that it is a 100% grape product.

After being launched in Goa and some smaller states, the brand was recently launched in Hyderabad. At a media preview organized by Sula at Taj Krishna, we were put through a tasting session where we tried out three glasses of similar looking liquors and were asked to guess the brand among these. The brandy was easy to identify with its smooth taste and distinct fruity aroma. The other two were scotch whiskies in the same premium price range.

Master Blender Yonael Bernard

From the presentation that followed, we learnt that the name Janus comes from a mythological Greek figure with two faces – one looking at the past and the other at the future, signifying transition. The brandy, made from select grape varieties found in the Nashik region and matured in French oak barrels, follows the same procedure as the famed French Cognac. Blending is done under the supervision of French master blender Yonael Bernard who is the creator of the brand. The distilling is done in Baramati, Maharashtra whereas the bottling is done in Goa.

After the presentation, we tried a few cocktails with Janus as a base. While a few of us liked the brandy with cranberry juice and ice, the real winner was the combo with ginger ale. I had also noted some other cocktail suggestions in the presentation, of which one was with hot and fresh coffee.

Eat Chill Talk
The Indian Punch at Eat Talk Chill, Hyderabad

But the best concoction of Janus for me was reserved for the next day. At the opening of Eat Talk Chill, a new lounge at the very popular United Kitchens of India restaurant, star mixologist of Hyderabad and a good friend Sharad Arora prepared a delicious cocktail with Janus named The Indian Punch. The drink uses Janus brandy as a base with Earl Grey Tea, lemon and spices like cinnamon and cloves. Served hot and cold, the former is also a perfect recipe for curing persistent common cold – a familiar use of brandy at home during my childhood days in Kolkata. Easily, one of the best cocktails I had in recent times, and strongly recommended.

Janus has just been launched in Andhra Pradesh.  It is a premium brandy which comes in two sizes. The 750 ml version is priced at around Rs 2275, whereas the 180 ml one is around Rs 600.  The product should be a nice new option for discerning consumers in the premium Indian segment.

Disclaimer: The review is based on my experience at the launch of Janus in Hyderabad. I was invited for this event. However, the opinion expressed in the post are honest and unbiased.

Scabetty: Trying out the ready to cook gourmet meal box

Soumabha     8:23 PM     Product Reviews, Sabyasachi     No comments

In today’s fast paced world, many busy working couples find it difficult to do their weekly groceries, and often face a situation where after a hard day’s work, they find that their house does not have the minimum provisions to cook a meal. In another case, food lovers often think about cooking exotic dishes but shudder at the thought of shopping for the unusual ingredients which may not be available locally. Also the minimum quantity they may need to buy of some of these may be too much for them to use even over a month.

Scabetty Sumac Chicken
Sumac Chicken in Pita - the packed ingredients

A ready to cook meal box is a simple answer to all these. These boxes have all the ingredients required to cook a gourmet meal, in just the right quantity. A step by step direction is provided for you to finish your cooking under thirty minutes. The recipes are tried and tested and the quantities are measured, so there is no need for the chef to taste the meal to decide on the quantities.

Scabetty is a new entrant in this field, currently focusing on Lebanese, Mexican, South East Asian and European cuisine. The menu that they offer is carefully designed so that preparing no item takes more than half an hour. Diligently sourced ingredients including meat, vegetables, spices and oil are neatly packed in the right quantity in a large cardboard box along with a leaflet which explains the step by step preparation method with photographs of every step.

Sumac Chicken in Pita Pocket

I was approached by Scabetty to try out two items of my choice from their menu and provide feedback on my experience. I chose a Lebanese delicacy Sumac Chicken in Pita (served with feta cheese and olive salad) and the very common Thai Green Chicken Curry (served with Som Tam salad and sticky rice). I ordered through their portal through a simple process and bingo the packages arrived at my home.

As I opened the boxes, I was happy to see the neatness with which the ingredients were packed. I decided to do the Sumac Chicken in the morning and the Thai Green Curry in the evening, as shelf life for the box is advised to be twelve hours.

Preparing the Sumac Chicken included cutting the chicken breast pieces into thin slices, applying the marinade supplied by them, and then cooking the chicken in olive oil sent in a bottle. For the salad, the veggies as well as feta cheese and olive were packed in small plastic packets. The dressing was supplied in a separate bottle.

I had no problems preparing the dish as the instructions were crystal clear. The pita pockets had to be reheated before assembling the final dish, and within 30 minutes the whole meal was ready with dollops of Tahini sauce and the meat and veggies inside the pita.  The quantity supplied was good for two persons, but we had friends visiting, so we shared it among us. Everyone liked the dish, the only complaint was from me of the salt was a trifle more than my liking.

Thai Green Chicken Curry Scabetty
Thai Green Chicken Curry - the ingredients

In the evening I tried out the Thai Green Curry. The method had three parts – cooking the chicken, and preparing the sticky rice and the salad. The steps given here nicely juggled between the three processes to ensure that the meal was ready in half an hour.  Except in one place of confusion (on whether throw out the water after boiling the veggies or add the water while making the curry) I could do the cooking seamlessly. The Thai Chicken Curry worked out well with sticky rice, and the sweet and spicy Som Tam salad with crushed peanuts and the dressing.

Thai Green Curry
Thai Green Chicken Curry

The main advantages of the product are that the process is simple, and you can have all the ingredients in the optimal quantities from a single source. Also as the dishes can be prepared in under thirty minutes, it is not much of a bother to prepare dinner after office. Scabetty understands the importance of the health aspect, and the recipes are designed by expert chefs keeping this in mind. The whole process is very convenient and the step by step instructions lucid. As opposed to some other suppliers, Scabetty boxes are full meals, so you need not separately prepare any sides or carbs for the main course.

Scabetty has the list of dishes available on their website. When I had a look, it had about a dozen items including a dessert (Tiramisu). A friend mentioned that she tried out the tiramisu and it worked out pretty well. Things in the current menu  which interested me are Chicken Chimichanga, Blackened Chicken, Laksa  and Lasagne. Since the shelf life is twelve hours, you have to prepare and consume on the same day. However, their website has the provision of ordering five different items together, each to be delivered on five different days.

The price is Rs. 450 for a vegetarian box & desserts and Rs. 550 for a non-vegetarian box. Each box has sufficient quantity for a complete meal for two people. They change their menu every month to avoid monotony in their customers.

Blue Eyes Vodka : A new entry in the mid-range Vodka category

Soumabha     11:34 AM     Naman, Product Reviews     No comments

Rock & Storm Distilleries was launched in 2010 and has made its name in premium and semi-premium whisky, rum, and gin. Headquartered in Punjab, it has launched its own Vodka brand, by the name of Blue Eyes in Delhi NCR. It is widely available in all the stores and is also pocket friendly. The vodka brand comes in two variants - Pure Grain and Green Apple.

Blue Eyes Vodka: Green Apple (Left) & Pure Grain (Right) | Foddaholix
Blue Eyes Vodka: Green Apple (Left) & Pure Grain (Right)
The company had sent us samples of both the variants requesting us for a feedback on them. I first tried the Pure Grain Vodka which is diluted to 75 proof. Every liquor contains alcohol but not in its purest form, while Pure Alcohol is 190 proof normally all the liquor is diluted down to lesser proof, in case of Vodka it is generally 80 proof. I tried this with some orange juice and a little Tabasco sauce and the drink went smoothly with little burning sensation in your throat which can be expected of any other Vodka.

The Green Apple Vodka has a very prominent flavor of green apple and goes very well with some mango juice and lemon chunks. There is very nice aftertaste from both of these versions, making them a perfect drink to have on a Friday night with your friends, if you are looking for some liquor that suits your pocket. It will surely give competition to the well known brands such as Smirnoff and Magic Moments, in the mid-range category .

Blue Eyes Vodka have created some cocktail recipes keeping the freshness and unique role of each flavor in creating a premium and refreshing palate experience. They have used seasonal fruits, topped up with tangy flavors and signature chaat masalas. Their mixologist has infused these flavors measured with precision to create the perfect Blue Eyes Vodka cocktail mix, which everyone can enjoy in this hot summer. The New Tulsi Tea and Ginger Lemon Tea from Paper Boat Drinks

Soumabha     8:45 PM     Product Reviews, Sabyasachi     No comments

A big box from Paper Boat Drinks was delivered to our doorsteps a few days back. On opening the package we discovered a reusable jute bag. Inside there were pouches of two new drinks from Hector Beverages – both based on tea.

Paper Boat Drinks Tea #paperboatdrinks
The Two New Flavours

Few months back, we had reviewed Paperboat's range of fruit juices , a fine addition to the Indian beverage market. Since then, their products have been appreciated a lot and they are available all over India, in marts, in malls and even in flights .

The new drinks being introduced are based on Darjeeling Black Tea, which is known all over the world for its delightful flavor. There are two variants - Ginger Lemon Tea and Tulsi tea. These have not been introduced in the market yet, and the package was sent to me for a preview. A small note alongside had a request for a genuine feedback on the drinks.

Paper Boat Drinks Package

The packaging of the products remains very similar to the earlier ones – in terms of size, shape and the proprietary multi-layered pack designed to sustain intense heat and pressure.

There were two samples each of both the variants – nicely arranged inside a brown bag. The fine print on the sachets mentions that no preservatives or added colors are present in the drinks. We have been drinking Darjeeling Tea at our home since childhood,  and I was extremely curious to try out these new offerings from Paper Boat.

Tulsi Tea Paper Boat
Tulsi Tea

Tulsi Tea: Tulsi or basil leaves have lot of therapeutic value. Due to this reason it is taken in various forms in Indian households, with tea being the usually preferred option. The Tulsi tea from Paper Boat was indeed an refreshing drink with strong taste of tulsi blending very well with the flavor of fine Darjeeling tea.  My entire family liked this particular variant, though one of them commented that it would be a good idea to try out the tulsi flavor with green tea instead.

Paper Boat Ginger Lemon Tea
Ginger Lemon Tea

Ginger Lemon Tea:  This flavor is already very popular, prepared at home as well as available as tea bags. The Paper Boat package says it contains long black tea, ginger, lemon juice concentrate and lemon grass. On tasting, I found that the offering from Paper Boats had a very subtle taste mainly of lemon tea. The ginger flavor was a bit underdone in my opinion. The drink is extremely smooth and leaves a nice aftertaste in your mouth. I would like it to be a bit more gingery though.

The drinks have no artificial colour, flavor or preservatives. Hector Beverages plan to launch the drinks shortly. Each pouch containing 250 ml is priced at Rs 30.

My Sweet Store: Bengali Sweets from Kolkata Delivered at your doorsteps

Soumabha     9:01 PM     Product Reviews, Sabyasachi     1 comment

A few years back, Pista House started delivering the Hyderabad’s own haleem all over India by courier. At that time, my wife, who is a huge fan of Bengali mishti wondered if Kolkata sweet shops will be enterprising enough to deliver their sweets in a similar way to all over India.

This year Mysweetstore.in has answered to the prayers of millions of fans of Bengali sweets. Now the best Bengali sweets from iconic sweet shops from Kolkata can be ordered on the web and delivered at your doorstep within a couple of days.

Balaram Mullick Jalbhara Sandesh
Jalbhara Sandesh from Balaram Mullick

The detail of this web store was forwarded to me by a friend in Kolkata.

As I looked at the web site, I found that they are delivering from three premier sweet shops of Kolkata - Balaram Mullick, Nakur and Mithai of Park Circus. For Balaram Mallick they are offering about 15 types of sweets, the well known ones being Jalbhara Nolen Gurer Sandesh, Danadar, Baked Rosogolla as well as Mishti Doi. Nakur offers many variants of their famous sandesh – including both traditional talshash and new age fusion sweets like Chocolate and Black Forest Sandesh. Mithai has their famed Malai Chamcham as well as their Sada Mishti Doi.

Jalbhara Sandesh
The Delicious Jalbhara

I picked up two variants of sandesh – Jalbhara from Balaram Mullick and Fruit Flavored Naram Pak Sandesh from Nakur. The checkout procedure allowed me to specify a delivery date which was a Saturday for my convenience.

Nakur Sandesh
Fruit Flavored Naram Pak from Nakur

The sweets were neatly packaged inside a big box. I am a nolen gur buff and tried the Jalbhara first. Anyone who has tasted this beauty from Balaram Mullick knows that it is one of the best sweets available in Kolkata. It felt good to discover that the sandesh tasted quite fresh, as if it was bought it in Hyderabad itself.

Nakur Naram Pak
The four flavors of Naram Pak Sandesh

I was more apprehensive about the Nakur sandesh since it was the naram pak or soft version. There were three each of mango, strawberry, butterscotch and kiwi sandesh.  I had asked for it as I had not tried the concept of fusion sandesh before. Here again, the box of sandesh passed my test. It was fresh and delicious, and I kind of liked the different flavors they had.

The web site thus provides a good opportunity for probasi Bengalis (bengalis outside Kolkata) as well as the lovers of Bengali sweets to get their favourite Kolkata sweet delivered via Fedex. They also have the concept of Combo Packs where 2-3 varieties of sweets are combined to give a better deal.

My Sweet Store Packaging
Neat Packaging

For economies of scale, it makes sense to order a bigger quantity. For example, the pack of 20 Jalbhara costs Rs 675 (Rs 34 per piece) whereas a Nolen Gurer Sandesh in Bikanervala Hyderabad costs Rs 35. Bigger quantities for parties or get togethers may work out even better.

Paper Boat Drinks - Product Review

Soumabha     3:03 AM     Product Reviews, Soumabha     1 comment

Paper Boat Drinks manufactured by Hector Beverages are one of the newest entrants to the packaged juice industry. Aimed at putting one in a reminiscing mood, they have largely expanded their operations from what it was in 2012 and now cater to multiple airlines, marts and malls making it a national brand. When they contacted us for a product review, we accepted it at once.

Paper Boat All Flavours
Paper Boat All Flavours

Sold at a reasonable cost of Rs. 30/- for every 250ml of juice, the packaging boasts of honest Indian drinks with no added preservatives and artificial flavours, as we found out after tasting their drinks. Every sip is a refreshing one with the sweetness and tanginess of the natural flavours flooding the mouth, creating a mystical swirl which brings back old memories.

Paper Boat Packaging
Paper Boat Packaging

Starting off with only 4 flavours, they are increasing their variety in a prolific rate much to the joy of the customers whom they cater to. We have tasted 7 of their flavours which they were kind enough to send in a neatly packaged orange gunny bag. While the looks of the packs inside were cute, they were also designed for keeping the drink fresh and convenient to carry around.

Aamras

Paper Boat Aamras
Paper Boat Aamras

While you would argue that Aamras is basically Maaza or Slice, the taste differs significantly. The juice is naturally more thicker and isn't artificially sweet like most of the soft drinks. The sweetness comes from the mango pulp which is equivalent to heaven even by Alphonso standards.

Paper Boat Imli ka Amana, Golgappe ka Paani and Kokum
Paper Boat Imli ka Amana, Golgappe ka Paani and Kokum

Imili ka Amana

Paper Boat's experimentation with Imli - Imli ka Amana, was a tad bit disappointing as the tanginess has been greatly mellowed down to make way for a sweet and soothing drink. Though the drink gets top marks for originality as no one has ever concocted a drink with imli yet, the natural flavor of imli was greatly diminished.

Golgappe ka Paani

Golgappas, phuchkas, pani-puri -  though all of them essentially refer to the same snack , the composition of the water dip ( Golgappe ka paani) is what differs from region to region. The tamarind concoction in the drink has a fine blend of black salt, cumin, red chilli powder, coriander powder and aamchur powder which makes it so tasty. The Paper Boat version is that of the version popular in the western parts the India and is a bit sweeter than its counterpart which is a tad bit spicier.

Kokum

Used as a souring agent in Goan/Konkani curries, the taste of the Kokum juice was a bit surprising to me. It was tangy and a bit spicy, but was equally soothing. The fact that I have never tasted Kokum juice before made this new flavour even more appealing.

Aam Panna

Paper Boat Aam Panna
Paper Boat Aam Panna

Aam Panna is everyone's favourite summer time drink. The taste of raw mangoes seems refreshingly good and the spicy khatta meetha taste brings back nostalgic memories of childhood. The Aam Panna is extremely effective against heat waves and heat strokes which makes it extremely popular during the sweaty summers.

Jaljeera

Paper Boat Jaljeera
Paper Boat Jaljeera

Another popular Indian summer time drink, the Paper Boat Jaljeera is the perfect infusion of cumin, rock salt, lemon juice and black pepper. Technically, there are two versions of Jaljeera which are famous in India, the spicy one and the khatta meetha one - the drink in the pouch is of the khatta meetha variety. Other than the sweet and heavenly taste, the jaljeera serves to cool the body and the jeera along with black salt in the mix aids in digestion.

Jaamun Kaala Khatta

Paper Boat Jaamun Kaala Khatta
Paper Boat Jaamun Kaala Khatta

The flavor of the drink is predominantly salted Jaamun, rather than Mumbai Kala Khatta. The juice is spiced up, tangy and leaves a faint aftertaste which can be expected from Jaamun flavored drinks. Fortunately, unlike the common Jaamuns, it doesn't leave a bluish tinge on the tongue, which makes us more presentable even after drinking gallons of the juice. Also, it is the only Paper Boat juice on which 'Shake and Sip' is mentioned just below the bottle cap.
